Fall is just around the corner and that means it is time for the members of our Proprietor and Somm Wine Clubs to start making their selections for the Fall 2023 Wine Club allocation. To aid in the process, Head Winemaker Drew Perry has preselected a collection of three wines that include a multi-award winning sparkling wine, a new release white wine, and an award-winning red wine.

Multi-Award Winner: Blanc de Blanc

A staple of Aurora Cellars, the Blanc de Blanc is made with 100% Chardonnay. Head Winemaker Drew Perry explains that Chardonnay is the perfect variety for bubbly production. The variety allows the process of bubbly wines to be expressed while in addition to being the vinifera variety to grow the best in our region – especially in the cold weather. 

Just like with our other sparkling wines, the Blanc de Blanc is produced using the Charmat method. The pace in which this process goes allows us to constantly refine the technique to make the best possible sparkling wine. 

When enjoying this bubbly, there will be notes of apple and lemon. This is one of those wines that you don’t need to wait for a big celebration to enjoy.

New Release: 2022 Pinot Blanc

New to our tasting room, the 2022 Pinot Blanc is sure to become a fan favorite. After a long time of getting these vines into the ground and trying to find the right spot for it, Perry is confident that Pinot Blanc is sure to become a staple at Aurora Cellars. Pinot Blanc is one of those wines that is perfect for our climate and our environment.

It has a beautiful acidity and is not overly dramatic in its aromatics. Our Pinot Blanc has aromatics of pear and lime zest while having a crisp, delicate, and delightful finish. Perry describes this variety as being “like Pinot Grigio but a little less showy”. Our blend is made of 80% Pinot Blanc and 20% Auxerrois.

Pinot Blanc typically pairs perfectly with roast chicken, salads, and other light meats. If you are looking to go more of the no meat route, this variety will also work with mild cheeses, seafood, pasta, and creamy or acidic sauces. 

Award Winner: Pinot Noir

Perry describes the Aurora Cellars’ Pinot Noir as very reflective of the old school European take on the variety.

The vineyard in which the fruit for this wine has changed over the years. It started as fruit that would be used for still wines, then switched to bubbly production and then back to still wine. 

Pinot Noir is a unique wine with unique aromatics but pairs well with the right foods. Due to its higher acidity and low tannins, Pinot Noir pairs well with duck, chicken, pork and mushrooms.
